Orange Walnut Salad


  • 1/3 cup orange juice
  • 1/3 cup REGINA Red Wine Vinegar
  • 1/4 cup peanut or vegetable oil
  • 2 tbls. sugar
  • 1 teaspoon finely grated orange peel
  • 8 cups mixed salad greens, torn
  • 2 medium cucumbers, thinly sliced
  • 2 cans 11 oz each Mandarin oranges, drained
  • 1 cup chopped walnuts
  • 1/4 cup green onions, sliced


In small bowl, combine orange juice, vinegar, oil, sugar, and orange peel until well-blended; chill until serving time.

In large salad bowl, combine salad greens, cucumber, oranges, walnuts, and green onions. Pour salad dressing over salad; toss to coat well. Serve immediately.

Makes 10 to 12 servings.
