Zesty fajitas placed upon beds of crisp lettuce are topped off with a sweet and savory dressing made from a blend of mango nectar, shallots and Dijon mustard. Serve this at your next luncheon, bridge party or early dinner party with tortilla chips.

Ortega Fajita Salad with Mango Dressing


  • 1 cup mango nectar
  • 1/4 cup chopped shallots
  • 3 tbls. olive oil
  • 3 tbls. lime juice
  • 1 tablespoon Dijon mustard
  • 10 cups mixed salad greens
  • 1 package (20-oz.) frozen steak fajitas, prepared according to package directions


PLACE nectar, shallots, oil, lime juice and mustard in blender; cover. Blend until almost smooth.

PLACE salad greens on serving plates; top with fajitas. Drizzle with dressing. Season with salt and ground black pepper.
