Polaner Spices - Iced Basil and Tomato Soup


  • 1 3/4 pound tomatoes, cored
  • 2 tbls. olive oil
  • 2 cups spanish onion, thinly sliced
  • 1/2 cup green pepper, finely chopped
  • 1/2 cup celery heart, thinly sliced
  • 1/2 teaspoon thyme
  • 1/4 cup fennel, thinly sliced
  • 1/4 cup POLANER Chopped Basil
  • 2 tbls. tomato paste
  • 2 1/2 cups chicken stock
  • 1 cup tomato juice
  • salt and ground black pepper to taste


Cube tomatoes and set aside. Sauté onion, green pepper, celery, thyme and fennel in olive oil until tender. Add Polaner(r) Basil, tomato paste and stir. Add broth and bring to a boil. Add cubed tomatoes. When the mixture returns to a boil, reduce heat and simmer 30 minutes. Remove from heat. Add tomato juice and chill thoroughly. Blend chilled soup in food processor until finely pureed. Season to taste. Garnish with fresh basil leaves, if so desired.

Makes 6 servings.
