Portobello and Asparagus Fajitas


    1    tablespoon olive oil
    6    ounces sliced portabella mushrooms
    3/4    cup water
    1    packet (1.25 ounces) ORTEGA Hot and Spicy Taco Seasoning Mix
    1/2    pound asparagus, tough stems removed, cut into 1-inch pieces
    6     (8-inch) ORTEGA Soft Flour Tortillas


Heat oil in medium skillet over medium heat. Add mushrooms. Cook and stir 5 minutes or until tender and lightly browned

Stir in water and taco seasoning mix. Add asparagus and toss to combine. Cook and stir 4 minutes or until asparagus turns bright green. Reduce heat to low. Simmer 4 minutes longer or until sauce has thickened.

Wrap tortillas with clean, lightly moistened cloth or paper towels. Microwave on HIGH (100% power) 1 minute, or until hot and pliable. Divide filling evenly among tortillas and roll up. Serve warm.

Tip: Boost the flavor of these fajitas garnishing with sour cream or shredded cheese, or add other vegetables to the filling mixture.
