Burritos are basic, but fresh ingredients make them a healthy and delicious standby for weeknight dinners.

Quick Bean and Rice Burritos


  • 1/2 cup quick-cooking brown rice
  • 6 6-inch flour tortillas
  • 1 can 8-oz. canned black beans, drained
  • 1 small tomato, chopped
  • 1 clove garlic, peeled, minced
  • 2 tbls. minced red onion
  • 2 tbls. chopped scallion
  • 1/2 teaspoon chili powder*
  • 1/2 cup ORTEGA Salsa - Homestyle Recipe (Mild)


Cook rice; set aside. Wrap tortillas in foil, place in 325°F 5 to 10 minutes to warm. Meanwhile, combine beans, tomato, garlic, onion, scallion and chili powder in medium saucepan; bring to boil, reduce heat and simmer 5 minutes.

To serve: place 2 tablespoons rice and 2 tablespoons bean mixture in warm tortilla. Top with salsa. Roll burrito style. Serve immediately.

*Add more chili powder if a higher level of spice is desired.
