Ranch-Style Soft Tacos


  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 pound lean ground beef
  • 3 tbls. ketchup
  • 1/3 cup barbecue sauce
  • 8 small corn tortillas, warmed
  • 1/2 cup reduced-fat cheddar cheese, shredded
  • 2 cups lettuce, shredded
  • 1 cup ORTEGA Salsa - Thick & Chunky (Medium)


Heat a nonstick skillet over MEDIUM-HIGH heat. Add the onion and pepper and cook until soft, about 5 minutes. Add the beef and cook until brown, about 10 minutes; drain and return to the pan. Add the ketchup and barbecue sauce, lower heat and simmer for 3 minutes. Fill corn tortillas with meat mixture. Garnish with cheese, lettuce, and salsa.
