Beans and rice are a classic combination in Mexican cuisine. A bit of onion and a spoonful of salsa add plenty of flavor to these easy and healthy burritos.

Red Beans and Rice Burritos



Preheat oven to 300°F.

Mix rice and onion in a small bowl.

Place tortillas on a flat surface. Divide kidney beans and the rice mixture among the tortillas. Fold all four sides of each tortilla up to overlap. Flip and place on a baking sheet, seam-side down. Heat burritos for 15 minutes or until heated throughout.

Spoon salsa on top.
