Regina® Creamy Olive Oil Dressing


  • 2 large eggs
  • 1 cup olive oil
  • 1/4 cup REGINA Red Wine Vinegar
  • 8 ozs. tomato sauce
  • 1 cup chopped white onion
  • 1 cup chopped green pepper
  • 3 tbls. grated Parmesan cheese
  • 3 tbls. dark brown sugar
  • 1/2 teaspoon salt


Process the eggs in a blender at high speed until they are light and frothy, about 15 seconds. With the blender on, slowly add the oil in a thin stream. When all the oil is in and the consistency is like a thin mayonnaise, add the remaining ingredients and process until well blended. Stop the blender and scrape the sides with a spatula if necessary.

Makes about 2 cups.
