Rock Shrimp Tacos


  • 1/2 pound rock shrimp, thawed and peeled
  • 8 (6-in.) corn tortillas
  • 1/2 cup ORTEGA Salsa - Thick & Chunky (Medium)
  • 2 cups shredded lettuce
  • 1/4 cup minced peeled red onion
  • 1 avocado, pitted peeled and cubed
  • 1/4 teaspoon ground black pepper
  • 2 limes, cut into wedges


Preheat oven to 350°F.

Bring a medium saucepan of salted water to a boil. Add shrimp and gently poach until just pink, about 2 minutes; drain and cool.

Wrap tortillas in foil and heat for 10 minutes, or until warm.

Divide salsa evenly between tortillas. Top with lettuce, cooked shrimp, onion and avocado; season with pepper. Serve immediately with lime wedges.
