This meatloaf has become a favorite of my husbands and friends. Even a great recipe for grilled hamburgers.

Salsa Meatloaf


2 lbs. ground lean beef
1 cup bread crumbs
1 small jar Ortega mild salsa
1 medium diced onion
1 egg, beaten
1 teaspoon salt
1/2 tsp. cayenne pepper


Mix all ingredients in a large bowl until well blended.
Place in loaf pan. Pat down mixture until pan is full from side to side, corner to corner.
Bake in preheated oven 350 degrees for one hour, or until browned on top.
Serve with guacamole salad and mexican corn.
