Santa Fe Alaska Surimi Seafood Wraps


  • 40 ozs. mayonnaise
  • 20 ozs. prepared low-fat Italian dressing
  • 10 ozs. fresh lime juice
  • 1/4 cup chili powder
  • 3 tbls. garlic salt
  • 10 lbs. Alaska Surimi seafood chunks or shreds, (thawed if necessary)
  • 32 ozs. ORTEGA Diced Green Chiles
  • 3 lbs. canned corn
  • 12 cups cooked rice
  • 10 ozs. green onions, sliced
  • 5 ozs. chopped fresh cilantro
  • 50 lettuce leaves
  • 50 flour or corn tortillas


In large bowl, blend mayonnaise, dressing, lime juice, chili powder and garlic salt.

Stir in surimi, green chiles, corn, rice, green onions and cilantro.

For each serving, portion about 1 cup seafood salad into center of a lettuce-lined tortilla.

NOTE: Can substitute spinach leaves for tortillas.
Yield: 50 servings (2 servings shown)
