This quick casserole is sure to be a hit with your hungry family. Pair with Fiesta Coleslaw and cool glasses of iced tea for a complete Mexican meal.

Santa Fe Beef and Cheese Bake


  • 1 pound ground beef, cooked and drained
  • 8 ozs. elbow macaroni, cooked according to pkg. directions
  • 6 strips bacon, cooked and diced
  • 1 can (10.75-oz.) condensed tomato soup
  • 1 can (4-oz.) ORTEGA Diced Green Chiles
  • 1 teaspoon chili powder
  • 1/4 teaspoon ground cumin
  • 1 cup shredded cheddar cheese


PREHEAT oven to 350°F. Grease a 2-quart baking dish.

COMBINE tomato soup, chiles, chili powder and cumin in medium bowl. Add beef, macaroni and bacon. Transfer to prepared baking dish. Top with cheese; cover.

BAKE for 20 to 25 minutes or until heated through and cheese is melted.
