This is a perfect side dish for a crowd or add a warm, crusty loaf of bread and your favorite prepared salad for a complete and satisfying meal.

Sausage and Green Chile Pilaf


  • 3 tbls. butter or margarine
  • 1 pound sliced mushrooms
  • 1 cup diced onion
  • 1 1/2 pound bulk sausage, cooked and drained
  • 4 cans (10.5-oz.) chicken broth
  • 2 cups uncooked rice
  • 1 can (7-oz.) ORTEGA Diced Green Chiles
  • 2 tsps. chili powder
  • 1 teaspoon ground cumin


PREHEAT oven to 350° F. Lightly grease 13 x 9-inch baking dish.

MELT butter in large skillet; cook mushroom and onion until tender. Add sausage, broth, rice, chiles, chili powder and cumin. Transfer to prepared baking dish; cover.

BAKE for 55 to 60 minutes or until rice is cooked and tender.
