Here's a perfect meal for two, or if hungry appetites rule, go for it yourself. Add your favorite salad, a selection of fresh fruits and relax.

Sausage and Green Chile Quiche


  • 3 tbls. butter or margarine
  • 1/2 cup all-purpose flour
  • 1 tablespoon or more ice water
  • 1 tablespoon vegetable oil
  • 1 cup finely diced red bell pepper
  • 8 ozs. sausage, cooked, crumbled and drained
  • 1 can (4-oz.) ORTEGA Diced Green Chiles
  • 1/3 cup shredded cheddar cheese
  • 3 tbls. grated Parmesan cheese
  • 2 large eggs, beaten
  • 1/2 cup cream
  • 4 tbls. milk


PREHEAT oven to 425°F.

MIX butter into flour until crumbly. Add 1 tablespoon ice water and lightly mix until incorporated; add more water until able to form mixture into a ball. Place in 7½-inch tart pan and pat to form crust. Bake for 5 to 6 minutes or until lightly browned.

HEAT oil in medium skillet. Add bell pepper; cook for 5 minutes or until tender. Remove from heat. Add sausage, chiles, Cheddar cheese and Parmesan cheese; spread on top of baked crust.

COMBINE eggs, cream and milk; pour over sausage and cheese mixture. Place tart pan on baking sheet.

BAKE for 10 minutes. Reduce oven temperature to 350°F. and bake for 15 minutes or until knife inserted near center comes out clean.
