Schmechellian Rollups

Ingredients

10 pack burrito sized tortillas

8 oz sour cream

8 oz cream cheese

8 oz extra sharp cheddar cheese, shredded

1 can (the 7 oz size) Ortega diced green chilies, medium heat

1 can, 4 oz, diced black olives

1 can, 4 oz, Ortega diced jalapenos

½ teaspoon of hot pepper powder (I use red Amazon or Tabasco chili powder, but any good, high scoville unit – mine are 75,000 – powder will do)

Directions

Drain all the canned ingredients. Mix all ingredients very well in a large bowl. The brew tends to get hotter when it sits overnight, so if you think it’s just a little on the mild side when you taste test it as you’re mixing it in, it’s probably just right.

Nuke the tortillas for 10 seconds or so to warm them. Lay a tortilla out, spoon a glob of the mix onto it, and spread it out smooth over the entire tortilla, about as thin as you can get it. Roll the tortilla up and repeat with the rest of the batch. Refrigerate ‘em over night. Just before the party, cut ‘em up into ½ to
