Shanghai Salad with Chicken

Ingredients

  • 1/4 cup salad oil
  • 3 tbls. REGINA Red Wine Vinegar
  • 2 tbls. soy sauce
  • 1 tablespoon ketchup
  • 1 tablespoon sugar
  • 1 teaspoon fresh ginger, grated
  • 1 whole small clove garlic, crushed
  • 2 cups cooked chicken, shredded
  • 1/2 cup red peppers, julienne
  • 1/2 cup celery, sliced
  • 1/3 cup carrots, grated
  • 1/3 cup bean sprouts, drained
  • 1/3 cup scallions, sliced
  • 4 cups lettuce, shredded

Directions

In large bowl, whisk togther oil, vinegar, soy sauce, ketchup, sugar, ginger and garlic. Add chicken, red pepper, celery, carrots, bean sprouts and scallions, tossing to coat well; cover. Refrigerate at least 2 hours, stirring occasionally. Arrange 1 cup lettuce on salad plate. Top with 1/2 cup chicken mixture; serve. Store, refrigerated, up to 3 days.



* 1 teaspoon ground ginger may be substituted
