These are a great appetizer for parties and can be made very quickly. Serves six as a generous starter.

Shrimp Quesadillas


1 lb. small raw shrimp
1 lb. shredded Monterey Jack cheese
6 large flour tortillas
2 yellow bell peppers, seeded, stemmed, and cut into strips
2 tbsp. butter
2 garlic cloves
5 sprigs of tarragon, finely chopped
3 tbsp. rum
pinch of salt
