Casseroles are America's answer to quiche. This Tex-Mex version is full of rice and green chiles; pair with a salad for a weeknight meal. It also makes a great centerpiece for a weekend brunch.

South-of-the-Border Rice Casserole



Preheat oven to 350°F.

In large bowl, beat together eggs, milk, taco sauce, onion and salt until well blended. Stir in chiles, rice and cheese. Pour into greased 8-inch square baking dish. Bake until knife inserted near center comes out clean, about 35 to 40 minutes.
