Southern Spicy Gingerbread


  • 3/4 cups vegetable shortening
  • 3/4 cups light brown sugar, firmly packed
  • 2 eggs
  • 3/4 cups BRER RABBIT Molasses, light or dark
  • 2 cups all purpose flour
  • 2 tsps. baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tsps. ground ginger
  • 1 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup boiling water
  • confectioners sugar, for garnish


In bowl, with electric mixer, beat margarine and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Blend in molasses. Sift flour with baking powder, baking soda, salt and spices. Add flour mixture alternately with water to molasses mixture, blending well after each addition. Spread into greased 9 x 9 x 2-inch baking pan. Bake at 350 degrees F for 45 to 50 minutes or until toothpick inserted comes out clean. Cool in pan 10 minutes. Remove from pan; cool completely on wire rack. Cut into squares; top with confectioners' sugar if desired. Makes 9 servings.
