This rice is coated in butter and honey before being boiled with green chiles and onions. Apple and almonds are tossed in near the end for an unusual side dish that would go well with pork chops or a simple roasted chicken.

Spicey Rice with Vegetables


  • 1/4 cup butter
  • 1 tablespoon honey
  • 1 cup chopped celery
  • 1 cup diced onion
  • 1 can (4-oz.) ORTEGA Diced Green Chiles, drained
  • 1 1/2 cup brown rice
  • 3 cups water
  • 1 apple, diced
  • 1/2 cup slivered almonds


Melt butter and honey in a medium saucepan; sauté celery and onion for 1 minute. Add chiles and rice; continue cooking until onions are soft and clear, about 3 more minutes.

Add water and boil for 5 minutes. Reduce heat to low, cover and cook for 30 minutes or until rice is tender. Add apple and almonds and cook for 5 minutes more. Remove from stove and serve hot.
