4 4ozcans whole chile peppers 1 cup shredded chedder cheese 1 cup Montery Jack cheese 4 beaten eggs 11/2 cups skim milk 2 Tbsp all-pupose flour 1/2 tsp seasoned salt 1/2 tsp garlic powder 1/2 tsp ground cumin 1/4 tsp dried cilantro 1/4 tsp black pepper 1/4 tsp paprika slice green onion(optional)
Grease a 2-quart rectangular baking dish. Pat the drained peppers with paper towels. Halve peppers lengthwise; remove seeds.Placehalf of the chili in the bottom of the dish.Sprinkle with half of both cheeses.Place remainig chili peppers in the dish; sprinkle with remaining cheese. Combine eggs,milk,flour,seasons;beat with a wire whisk till smooth. Pour over chili peppers & cheese. Bake,uncovered,in a 350 oven for 30 to 35 minutes

Comments: I used to make this recipe many years ago and used both Jack and Cheddar cheese. It is still one of our favorites and I make it often.
