Ingredients

  • 1 pound Yukon potatoes, diced
  • 3 ozs. bacon, diced
  • 2 shallots, diced
  • 1 cup celery, diced
  • 12 ozs. (1 1/2 cup) mayonnaise
  • 1 cup Dijon mustard
  • 2 tbls. REGINA White Wine Vinegar
  • 1 1/2 teaspoon worcestershire sauce
  • 4 medium hard-cooked eggs, chopped
  • 6 tbls. olive oil
  • 1 tablespoon REGINA Red Wine Vinegar
  • 1/8 teaspoon tarragon
  • salt and ground black pepper to taste
