Taco Rice Skillet


  • 1 pound ground beef
  • 1 onion, peeled and chopped
  • 1 can (16-oz.) whole tomatoes
  • 1 cup rice
  • 1 package ORTEGA Taco Seasoning Mix - Regular
  • 2 cups grated cheddar cheese
  • 2 cups shredded lettuce


In a large skillet brown ground beef and onion; drain, set aside.

Drain whole tomatoes, reserving the liquid. Add water to the reserved tomato juice to make 2-1/2 cups of liquid. Add to the beef mixture the tomatoes, the liquid, rice and taco seasoning mix. Bring to a boil, reduce the heat, cover, and simmer until the rice is tender and the liquid is absorbed, stirring occasionally, about 25 minutes.

Top with cheddar cheese and lettuce before serving.
