Ranchero means 'country-style,' and usually includes a rich sauce. This version includes barbecue sauce for a savory taco meat. Bu varying the heat of the salsas, from mild to fiery, you can satisfy everyone.

In a nonstick skillet over medium-high, heat the oil. Add the onion, salt, pepper and sauté until soft, about 5 minutes. Add the beef and cook until brown, about 10 minutes; drain and return to the pan. Add the ketchup and barbecue sauce and simmer for 3 minutes.

Fill taco shells with meat mixture. Garnish with cheese, lettuce and salsa.

TIP: For crispier taco shells, bake them in a preheated 350°F oven for about 5 minutes
