Three-Alarm Meatloaf



Preheat oven to 400°F. Spray 3-qt shallow baking dish with non-stick cooking spray. In large bowl, mix 1 cup enchilada sauce, 3/4 cup onion and remaining ingredients until well-blended. Shape mixture into loaf in baking dish. Bake 30 minutes. Mix remaining enchilada sauce and remaining 1/4 cup chopped onion; pour over meatloaf. Bake 30 minutes longer. Skim fat from sauce. Let stand 10 minutes for easier slicing.

Makes 8 servings.
