Tofu ''Meatballs''

Ingredients

  • 1 pound firm tofu, well drained
  • 2 eggs, beaten
  • 1/2 cup dry bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tbls. dried onion flakes
  • 1 tablespoon vegetable oil
  • 1 cup ORTEGA Salsa - Thick & Chunky (Medium)

Directions

In a bowl, mash tofu, then stir in eggs, bread crumbs, Parmesan cheese, onion flakes and Worcestershire sauce until well combined; form into 1-inch balls.

Heat oil until sizzling in a large heavy skillet over medium heat; brown the tofu balls on all sides, then reduce heat to low and pour salsa over. Heat thoroughly and serve hot.
