Tropical Chicken Salad


  • 3 tbls. ORTEGA Salsa - Thick & Chunky (Medium)
  • 2 tsps. curry
  • 3/4 cups mayonnaise
  • 2 cups fresh whole chicken, chopped
  • 2 apples, chopped
  • 1 cup pineapple chunks, crushed
  • 1/3 cup almond, chopped
  • 1/2 cup coconut, shredded
  • 1/4 cup golden raisins
  • 1 lettuce
  • 1 avocado, sliced


In a small bowl, stir together salsa, curry, and mayonnaise.

In a medium bowl, combine cooked, chopped chicken, chopped apples, crushed pineapple chunks, chopped almonds, shredded coconut, and golden raisins. Stir the mayonnaise mixture into the chicken mixture. Lay out lettuce leaves on a oval platter, arrange chicken with sliced avocado.
