Turkey & Black Bean Quesadillas


  • 1 can (15-oz.) black beans, rinsed, drained
  • 6 ozs. chedarella or cheddar cheese, cut into ½-inch cubes
  • 4 ozs. thinly sliced deli turkey breast, cut into strips
  • 1/2 cup ORTEGA Salsa - Homestyle Recipe (Mild)
  • 8 (8-in.) flour tortillas
  • 2 tbls. butter, melted


Heat oven to 375°F. Stir together beans, cheese, turkey and salsa in large bowl.

Brush one side of tortilla with butter. Place buttered-side down on baking sheet. Spoon about 1/3 cup filling on half of tortilla; fold in half. Repeat with remaining tortillas.

Bake for 10 to 15 minutes or until heated through. Cool 5 minutes. Cut each quesadilla into thirds. Serve with additional green or red salsa or sour cream, if desired.
