Vegetable Casserole I

Ingredients

  • 1 cup broccoli, chopped
  • 1 cup carrot, sliced
  • 1 cup celery, chopped
  • 1/2 cup onion, chopped
  • 10 3/4 ozs. cream of broccoli soup
  • 1 cup cottage cheese
  • 2 tbls. cornstarch
  • 1 teaspoon prepared mustard
  • 1/2 teaspoon paprika
  • 1/2 teaspoon thyme
  • 1/2 cup dry bread crumbs
  • 1/2 cup cheddar cheese, grated
  • 1/2 cup pecans, chopped
  • 1/4 cup ORTEGA Salsa - Thick & Chunky (Medium)

Directions

Combine chopped broccoli, sliced carrots, chopped celery and chopped onion; steam for 5 minutes, or until tender. Drain and place in 3 quart casserole dish. Add cream of broccoli soup, cottage cheese, cornstarch, prepared mustard, paprika, and thyme. Top with dry bread crumbs, grated cheddar cheese and chopped pecans. Drizzle salsa on top. Bake 20 to 25 minutes at 350 degree oven.
