Vegetarian doesn't have to be boring. Try this flavorful stew garnished with sliced green onions or ladle over warm squares of fresh baked corn bread for a satisfying meal.

Vegetarian Sweet Potato Stew

Ingredients

  • 4 tbls. vegetable oil
  • 2 small onions, diced
  • 4 cloves garlic, finely chopped
  • 1 yellow bell pepper, seeded and chopped
  • 1 red bell pepper, seeded and chopped
  • 4 cups water
  • 1 can (28-oz.) diced tomatoes
  • 3 cups diced peeled sweet potatoes
  • 2 cans (15-oz.) black beans, rinsed and drained
  • 1 can (4-oz.) ORTEGA Diced Green Chiles
  • 1/2 cup tomato sauce
  • 2 tbls. chili powder
  • 2 tsps. ground cumin
