Treat your family to this easy Mexican style chicken and rice dish. Serve with a side of warmed ORTEGA Refried Beans.

Zesty Chicken and Rice


  • 2 tbls. vegetable oil
  • 5 large (about 2 lbs.) boneless skinless chicken breast halves, seasoned with salt and pepper
  • 1 1/2 cup water
  • 1 bottle (8 oz.) ORTEGA Taco Sauce - Mexican Style
  • 1 1/3 cup long-grain white rice, uncooked
  • 1 can (14 1/2 oz.) diced tomatoes in juice
  • 2 green onions, sliced, (optional)


HEAT oil in large skillet over medium high heat. Add chicken; cook, turning frequently, until brown on all sides. Remove from skillet.

ADD water to skillet; bring to a boil. Scrape up pan drippings. Add taco sauce, rice and tomatoes; stir. Top with chicken.

COOK covered over low heat for 20 to 25 minutes or until rice is tender and chicken is no longer pink. Sprinkle with green onions.
