Zesty Sweet Potato and Chorizo Tacos

Ingredients

1 lb. Mexican chorizo
2 medium sweet potatoes, peeled and diced, approximately 1 lb.
1/2 small onion, diced, approximately 1/2 cup
1 can ORTEGA Black Beans, drained and rinsed
1 packet ORTEGA Taco Seasoning
10 ORTEGA Yellow Corn with Ancient Grains Taco Shells (or any ORTEGA taco shells of your choice), warmed
Your favorite taco toppings
1 lb. Mexican chorizo
2 medium sweet potatoes, peeled and diced, approximately 1 lb.
1/2 small onion, diced, approximately 1/2 cup
1 can ORTEGA Black Beans, drained and rinsed
1 packet ORTEGA Taco Seasoning
10 ORTEGA Yellow Corn with Ancient Grains Taco Shells (or any ORTEGA taco shells of your choice), warmed
Your favorite taco toppings

Directions

  1. Heat large skillet over medium heat
  2. Add chorizo and onion and cook, stirring occasionally, 3-4 minutes
  3. Add sweet potatoes, stir and cook and additional 3-4 minutes
  4. Add ORTEGA Black Beans, ORTEGA Taco Seasoning and 1/2 cup water
  5. Stir and reduce heat to low
  6. Cook 3-4 more minutes or until sweet potatoes are soft
  7. Serve in ORTEGA Yellow Corn with Ancient Grains Taco Shells with your favorite taco toppings
